I was recently contacted by Joe Blogs Network, and asked to help promote Homeserves new online magazine, named Ketchup.
They have asked bloggers to choose a recipe, from their selection, to re-create using (you guessed it) ketchup! Now we are big lovers of ketchup here, it is always on my shopping list. I have to be honest however, I've never cooked with it! I've never thought to put it in my cooking, just saw it as a condiment.
Saying that, it's perfect for us. I love cooking, and eating, as a family. I also have to cook on a budget, which this can easily fit into.
I consulted the family on which recipe to choose, they chose Ketchup Chicken. These are the ingredients we used, for a full meal:
In list form, the ingredients are:
500g Chicken Breast Fillets
4 Tablespoons of Tomato Ketchup
2 Tablespoons of mixed herbs: Sage, Oregano, Thyme and Rosemary (I actually put in a heaped teaspoon of each)
2 garlic cloves, finely chopped
30ml of Olive oil
Method:
Chop the chicken into chunks and crush the garlic:
Mix together the herbs and add the ketchup:
Add the chicken and garlic to the ketchup mixture, in a bowl and cover all the chicken.
Add olive oil to a pan to heat.
Cook for 10-12 minutes, or until the chicken is cooked through, stirring all the time:
Then serve. We had oven chips and coleslaw with ours:
It was utterly delicious, however, I think it would be equally as good with rice. It was a huge success as a family meal, and will definitely be making it on to my meal plan again.
