2 weeks in a row! I'm quite pleased with myself.
This really is a good way to take control of your finances, if money is a bit tight. My meal plans are all based on a very strict budget. Last week we stayed on plan until the very last day. Yesterday, time got away from us, it was 6pm when I realised that I hadn't put the roast in!
No worries though, we had a freezer dive, and the roast is on for today. My main shop, last week, cost me just under £50, not bad for a family of 5! I think it will be a little more this week, as there was still food leftover, from Christmas, that we could utilise.
Anyway, here's this weeks plan:
Monday: Bernard Matthews roast, served with Veg and potatoes. Basically, what was forgotten last week.
Tuesday: Coq Au Vin. Using chicken fillets from the local butcher and, my favourite budget item, a Coleman's sachet.
Wednesday: Corned Beef Stew. I'll write about this, one day this week. It's a really good budget meal, it's filling, packed with as many winter veg as you want, and will feed a family.
Thursday: Parmesan Chicken, with home made wedges. I love this meal, so easy! Basically you mix breadcrumbs, seasoning and a spoon of grated Parmesan (I used the ready grated packet). Coat the chicken with it, spray it with spray oil and put in the oven until the chicken is thoroughly cooked, lovely.
Friday: Chicken Chow Mein. Homemade, using a blue Dragon sachet, noodles I have in the cupboard and various stir fry veg (and chicken, obviously).
Saturday: Spaghetti Bolognese. A nice simple meal, and we'll have the left over Parmesan to top it with (teen will be happy).
Sunday: RJ's Birthday Dinner! It's his birthday Monday, all he wants is for me and Mr.Ojo to take him to the Carvery, so that's what we are doing. Little and Big boy are staying home together (sounds cruel, but everyone will benefit from it, believe me) and we shall give RJ our undivided attention.

DeleteI haven't had Parmesan Chicken for ages!! When I used to live near Middlesbrough they were such a big thing from Takeaways! I may have to add it to my meal plan for next week! I don't think the kids have ever had it!
