Yesterday I made Cauliflower and Broccoli Cheese. Doesn't sound particularly healthy does it? But it was..
I love to cook, I also love to find different ways to cook food healthily. Today I wanted to share with you my way of cooking the above, and making it into a type of gratin.
1 whole Cauliflower
1 whole Broccoli head
600ml of semi Skimmed Milk
120g of a Lighter Cheddar (I used Cathedral City Lighter)
3 heaped desert spoons of Cornflour (approx 45g)
1.5 slices of White bread, made into breadcrumbs (I used Braces Medium)
Firstly, boil up your vegetables. How you boil them is up to you, I like them with a little bit of a bite. If you cook them too much, you will end up with quite a mushy dinner.
Whilst your veg are cooking, put the cornflour into a plastic bowl and add a little of the milk to make it a paste. Add more milk, so it's a liquid, then place into a saucepan. Bring up to a boil, stirring all the time, turn the heat down. While it's simmering gradually add the rest of the milk. Keep simmering and stirring for a couple of minutes, this will get rid of the floury taste.
Grate the cheese and add most of it, keeping some aside for the topping.
Make sure your vegetables are thoroughly drained, I like to put them back into the hot saucepan, so that it steams off the water. Mix the vegetables and cheese sauce together, and add to a casserole dish.
Mix together the bread crumbs and left over grated cheese, then sprinkle all over the top of the vegetables and sauce.
Put under a low to medium grill, until the top starts to 'toast'.
As usual, I put my ingredients into MyFitnessPal, and a third of it (which is quite a meal!) came to 376 calories. Please bare in mind, when making this yourself, the size of your portions and what ingredients you use. My calorie count is based strictly on what I used. I had some cauliflower left over, that is being added to today's chicken and veg curry.
I do hope you try this, it's a great way to enjoy a cheese sauce, slightly healthier.
Talking of healthier, this week I managed to lose 3lbs! I am exercising nearly every day (Still dancing and jumping around the living room). I find I am feeling more awake too.
