We had a bit of a family meeting last night. We needed to talk about the way we are living our lives. We got a lot sorted out.
I explained to everyone that I am not feeling like a valid member of the house. I feel like I am just here for every ones benefit. I am not.
I am not here to just to cook, clean, tidy up after. I am a human being, with my own needs. I have struggled to find 'me'. I know that's a real corny saying, I've never understood it before. I don't know what to do with myself, I don't know how to spend my time.
There's also the issue of my health, it's not great. I had an appointment with the diabetic nurse today, it went OK. My sugars are a little better, but my blood pressure isn't. Swings and roundabouts....
So, the talk last night, was a lot to do with getting healthier, budgeting better in the run up to Xmas. These things will help me in the long run. We sat and discussed a meal plan, in amongst the rest of it. We all thought of foods that we would want on future plans, and how we can make our favourite foods healthier.
So here is this weeks meal plan.....
Monday
Homemade Vegetable Soup
Recipe: 500g Potatoes, 200g carrots, 1 parsnip, 2 medium onions, 2 beef oxo's.
Method: Chop all the vegetables into bite size pieces, crumble 2 beef oxo's, cover with water. Bring to the boil, then turn down to simmer, until vegetables are soft. It's delicious, easy, and great for a 5:2 fast day. It's only 130 calories a bowl.
