Turkey Chilli

This is my delicious, and very quick, recipe for Turkey Chilli. I know it sounds odd, but I often replace beef mince with Turkey mince. It does give it a slightly different flavour however, I like the flavour.

To create this delicious meal you will need.

250g of Turkey mince
1 large onion
100g mushrooms
1 courgette 
1 pkt of Coleman's Chilli Con Carne
200ml water

You may notice the distinct lack of tomatoes in the list of ingredients. I would normally use a can of chopped tomatoes or a carton of passata. Today, however, the cupboard was bare! I simply didn't have anything to add (I really need to go shopping).

Fry the Turkey mince until lightly browned, it won't go the same colour as beef mince, it will just go, well, the colour of cooked turkey! While the mince is cooking chop all the onion, mushrooms and courgettes. I like mine al dente, so I don't cut everything too small. 

Once the mince is no longer pink, add the onion. Lightly fry for a couple of minutes, then add the mushrooms and courgettes. Give them a couple of minutes, stirring often. 

Mix the Chilli mix with the water, I know this is more water than the packet states, but you have to account for the missing liquid from the tomatoes. Add the mixture to the pan with the mince and veg. Bring it to the boil then turn down to a simmer. Keep stirring regularly.

Keep this going for 15-20 mins, while it is cooking boil up some rice.

Et voila!

It really is as delicious as it looks. If you want it to be a bit more chilli looking, then add a squirt of tomato puree when adding the sauce mix.

This meal takes between 20/25 minutes to cook, and can easily feed 4......Unless you have a hubby that has just come in from work at 8pm, then he will eat what you didn't put on your plate.

I love replacing beef mince with turkey. It is healthier, quicker to cook and, I think, utterly delicious.
