No not the chocolate kind, they've all gone in this house! No I'm talking about the 'breakfast' kind.

BritMums have a competition running this week, in conjunction with mainmealsinminutes. I had already planned to have eggs for tea last night, before I had seen this, but I thought I would join in the linky, you gotta be in it to win it!!

I had also said that if the pastryless Quiche worked I would post about here it is!

5 medium size eggs
A splash of milk
2 Table spoons of grated cheese (more or less depending on taste)
Then, have fun with the fillings!...

I made 2, one extra healthy for myself. Then one that I knew the children would like.

My filling was
3 frozen balls of spinach (I prefer to buy frozen, as I never use a whole bag before it goes off)
The spinach is defrosted according to instructions before adding to the pan.
5 button mushrooms, roughly chopped
half a red onion, roughly chopped.

I simply put it all in the round pan you see above (yes, its a cake tin, shhh). Then poured half the egg mixture over, and sprinkled with 1 tablespoon of cheese.

My 2 eldest couldn't remember what quiche was! So I thought I'd have a little fun, using food I knew they liked. I grilled 4 burgers until almost cooked, then put the 4 of them, with the remainder of the red onion, in the square cake tin pan.
Now my eldest loves cheese and the 10yr old detests it, so I chopped up the 10yr olds burger, then sprinkled cheese on the 2 full burgers. This way they both got what they wanted!

I baked them in the oven Gas/6 for around 20mins, or if you have a temperamental oven like mine, until they are lightly browned (Cooked).
These are the finished plates. The kids wolfed down theirs with beans and mash. I thoroughly enjoyed my healthier version of it too! There was half of mine left, for when the Mr. got in from his afternoon shift.........he enjoyed it with a couple of pieces of bread and butter! Well it was close to midnight!

So that is my full dinner, made with 5 eggs and a lot of other ingredients I had around the house anyway. A very cheap and very tasty way to make tea.

Try clicking the link above for some more ideas on how to cook eggs for a main meal.
