Meal Planning (again)

I have been meal planning, off and on, even when not sharing on here. Now I have to really stick to it though.

The mister has had to take time off sick. Now I know that health comes first, and I totally agree. His job was, physically, getting too much, he needs to rest his leg and a big operation is in his near future. However, no work = very little income. The saying 'We're all only 3 mortgage payments away from homelessness' is very much at the front of my mind.

So, until he does go back to work, belt tightening of the highest order is called for. 

Don't expect anything too adventurous on my plans. If, however, you are on a tight budget and want some ideas, I will be sharing some very frugal plans.

Here's this weeks:

Monday: Home made Pizza. I have flour and yeast because this is something I've made regularly, in the past. Cheese, passata and toppings are relatively cheap to buy, especially the 'value' type
Tuesday: Burgers/Sausage with chips and sweetcorn. All frozen from Iceland
Wednesday: Hot Buffet. As it's new years eve, I thought I'd have a bit of a freezer dive, that we can all pick at. Everything from chicken nuggets to Indian platter.
Thursday: Beef with all the trimmings. Thanks to a local butcher opening up, we can pick up a piece of meat that suits us.
Friday: crispy chicken, mash and peas. Nice and easy, that all the family will eat.
Saturday: Sausage Casserole. This has appeared weekly since we rediscovered it! A pack of sausage and a Coleman's sachet, sorted. Tend to do it with frozen veg.
Sunday: Bernard Matthews Turkey breast roast. Yes, I do eat Turkey all year around! Another Iceland bargain, and the boys love it. Served with frozen veggies and boiled potatoes.

    Great meal plan.....Wednesday sounds the same as what we're having! Iceland is to blame....They have so much lovely party food!
    We love the Bernard Matthews Turkey breast roasts....So easy to cook and a bargain price :D x

  2. I am sorry to hear that your hubby is not well and that things are tight. I too love turkey and have it all year round. We also love the Colemans sausage casserole :-) I hope you all have a good new year and that things improve for you all xx #MealPlanningMonday

  3. Freezers...where would we be without the freezer dive! It's my lifesaver when I have an unexpected bill. Have you tried approved food website? They're cheap for cupboard filling.

    Hope your luck changes for the new year X

  4. Im sorry to hear about your husband, I job he gets his operation soon and recovers well. We are in preparing for a similar position, dh's back is very bad and hes struggling to work, we are waiting for a operation date. We are on a frugal mission too so will be following for inspiration! We love homemade pizza, we have a few reduced shop bought ones to use first but im secretly looking forward to homemade again.

    1. It's a nightmare, although his knee has been bad for months, it just became unbearable for him recently. I hope you get a chance to prepare, feel free to take any inspiration you can xx
