I thought I would share my, very, easy 'no bake' cheesecake with you. I know that this is odd, joining in with a Great Blogger Bake Off, with a dessert that doesn't need to be baked! But I did check and it's ok.
This really is tasty, and really is the simplest dessert you will put together. I put, in brackets after each item, what product I used.
No Bake Cheesecake
8 Shortbread fingers
1 tablespoon of butter/margarine
284ml of Double Cream (used Elmlea)
180g of Soft Cheese (Low Fat Philadelphia)
2 dessert spoons of Hot Chocolate drink (Options Belgian Chocolate)
2 dessert spoons of Granulated Sweetener
1 teaspoon of Vanilla Essence
Melt the butter in your preferred way, but be careful not to burn it.
Crush the biscuits, I put mine in a bowl and used a rolling pin.
Mix the biscuits and butter together, getting it all coated.
Put the mixture into a serving dish (that's suitable for freezing) and push down:
Then place in the fridge.
Using a whisk, mix the double cream until it is quite stiff, set aside.
In a bowl mix the soft cheese with the chocolate powder, then add the sweetener (I put in 2 dessert spoons, but add to your own taste) and vanilla essence and mix.
Blend together the cream and soft cheese mix.
Take the biscuit base out of the fridge and spread the cheesecake mix on top, as evenly as you can.
Place in the freezer for 1 hour (don't forget about it, like I did, it sets really hard).
Take it out of the freezer about 10 minutes before you are ready to eat and voila! One of the easiest cheesecakes you could possibly make!

I love this dessert, so does Mr. Ojo. The boys are not as fussed......awwww, pity!

As a side note, it's a lot lower in calories than an ordinary cheesecake, even less if you have a thinner layer of biscuit.
