Make it Healthy

I'm getting so much support on my weight loss journey, this time around. It's making such a difference, I feel so much more positive. I genuinely feel like I am making changes that I, and my family, can live with.

The thing that's changed..........is what hasn't!

I'm still making the same family meals I always have, just with minor adjustments, that make them healthy. A favourite of ours is Spaghetti Bolognese. It's on this weeks Meal Plan, so I thought I would share how I make mine.

Spaghetti Bolognese 
(All free on Slimming World EE)

Ingredients:
250g of Extra Lean Minced Beef (below 5% fat)
2 medium onions
150g of button mushrooms
1 medium bell pepper
2 cloves crushed garlic ( I use dorot frozen cubes)
1 carton of  Passata (I use a smart price version)
2 beef oxo's

Obviously you also use pasta, but that is according to your taste.

Method:
I use a non stick saucepan, as this makes quite a large quantity, I also don't use any oil in the cooking. If you would like to use oil, then a spray or 2 of a cooking spray would be fine. 
Heat the pan, then add the mince, move it around the pan and allow to brown.
While the meat is browning, chop the 2 onions. Once the meat is browned add the onions. I turn the hob down to a nice medium heat at this point, so the onions don't overcook. Chop the pepper and mushrooms and add to the pan, along with the garlic (if you are using fresh garlic, add with the onions).
Give the meat and veg a mix, then a few minutes 'frying', while moving it around the pan, to stop anything burning.
Add the carton of passata and mix it in well. Then add the 2 beef oxo's continuing to stir on a medium heat.
When it's all mixed in turn down the hob to a low heat and allow to simmer for 5 minutes. Make sure you keep going back and stirring, making sure it's not burning or sticking. 
Cook the pasta according to packet instructions and you're ready to serve!

This would easily feed 5, but with the big appetites in this house.......3! 

If you are following the Slimming World plan, on the Extra Easy, this is all free (including plenty of super free). If you're not following a particular diet, it's just a very healthy, tasty meal.

Weight loss this week!

I am now 3lb off my 1st stone (for any non UK readers that's 14lb, around 6kg)

Like I said, I have found some great support. Between twitter, myfitnesspal and, especially, my fellow Wobbles Wednesday linkers I always have like minded people to talk to. Life isn't always roses and sunshine, it isn't always easy to stay positive, but with support it's much easier to cope when the crap starts flying!

So thank you..........and well done me!
