It is Wednesday again, and I have made a vow to myself to be positive today. It seems to be working for me. I had so much support after yesterdays post, and I want you all to know how much I appreciate it. I have spoken before about my depression, yesterday was a real low point for me. Of course, that means, the only way is up.
So today was the first morning, since school resumed, that I have had to do the school run in the morning. I think I needed it. I was determined to get a few little things done too. So after taking the little one to school, I walked around the village, doing the things I had to do. But most of all, I smiled at people..........and I left the house when I didn't need to!
This has made the whole day feel better, and helped my mood.
Back to what this post is about though. My vow last week, was that this time I am serious. I joined Slimming world online, and have received fantastic support from some friends. I've also tried to get moving a bit more (again). This has all led to a ..........
Shocked, pleased, motivated........All of it!
One of the things I want to share with you was a recipe that has really got me through this week.
Its basically a frittata, made with leftovers. When you do your evening dinner, cook a little too much. I have used peas, sweetcorn, carrots, cauliflower, broccoli, potatoes. It's all gone in, in some combination or other.
Using spray oil, gently warm the veg through.
While its going, mix up 2 eggs.
Pour the eggs over the warmed veg, and spread out.
(Make sure you use a smallish pan, too big and the egg will burn)
As the underside cooks a little, weigh out 40g of a light, grated cheddar.
Turn off the heat, sprinkle the cheese on top, then place under the grill.
Give it a couple of minutes, or until the cheese is cooked how you like.

That's it! On a Slimming world plan, it's one healthy extra A choice (for the cheese). I have found it delicious. Nothing will make you stick to healthy eating like tasty food.
