Lower Fat Chicken Kievs

I said, when I did this weeks meal plan, that if my Slimming Chicken Kiev worked, I would share the recipe. 
Well it worked! So here is the recipe:

I am following the Slimming World plan, so this was made to fit in with my plan. This is NOT an official Slimming World recipe, it is all my own creation. I didn't look for any other recipes before putting it together, so if it resembles others it is purely coincidence.

CHICKEN KIEV

Ingredients:

3 good size chicken breasts
100g of low fat Garlic and Herb soft Cheese
2 Cloves of Garlic (optional)
3 eggs, whisked and put in a dish
6 slices of Wholemeal Bread (small loaf), whizzed up to breadcrumbs and put in a dish
Spray Oil
Seasoning




Method:

Preheat oven to gas mark 7 (425*f / 220*c)
Make a slit in the chicken, the reason there are 4 chicken pieces in the picture above, is because the chicken cutting didn't always go right! I just coated that one in breadcrumbs, for the tween.
Mix the Soft Cheese with the extra cloves of garlic, if chosen. I do love garlic, so really wanted the extra kick.
Using a spoon, put the soft cheese mix into the slit of the chicken. I used cocktail sticks to to hold it together, I am not an expert in the kitchen, but please remember to take them out after cooking!
Turn the chicken pieces in the egg, then the breadcrumbs.
Reapeat, it gives it a fuller, crispier finish.
Place on a baking tray and spray with the spray oil, season gently.
Cook for 20mins, then turn and spray again, cook for a further 20 mins

At this point mine were done, but please bare in mind, you know your own oven and how it cooks. Please ensure all chicken is cooked (clear juices). If you see any pink, place back in the oven for a few more minutes.

These were a huge hit in my house last night!

Using the plan that I am following (EE), this was 1 'b' choice, free and around 1.5 sins (or part of an 'a' choice). I had it with baked potato and side salad. Although I would check everything according to your own plan. If you are not on any plan, it's just a delicious, healthy, low fat meal!
