Wobble with a Recipe

So today is supposed to be an update on how wonderful my weight loss is going, how I am out working out daily........If that's the sort of thing you're looking for, look elsewhere!

I had an utterly crap week last week. I gained, probably in the region of, 7lb! Yes, really.

To say I was p**sed off would be an almighty understatement! I exercised daily, I (sort of) watched my food. Lets not kid ourselves though, I am just totally crap at dieting. Being a normal human being, and a hormonal one at that, can you guess what I did after the scales???

Of course, the next day, I got on the scales.......to see that, I had managed to gain more.

This is where a lovely fellow blogger, by the name of Bright Side of Life, jumped in to my rescue. She said it was my carbs, as in I am eating too many. Looking back on my diet diary I think she has it bang on! I eat way too many. She also sent me a diet plan that she is following, on professional advice. It basically involves NO carbs for the 1st 2 weeks.

So that is where I am at, at the moment.

I don't want to eat a plate of chicken and vegetables every day though. We have so many fresh, healthy ingredients at our disposal, why not find different ways to cook 'meat and veg'.

This was today's dinner, do let me know if you try it....

Cabbage Soup


Ingredients:

1 bag of cabbage and leek (I got a pre cut bag from Asda, otherwise it's just 240g of the mixture)
1 Red onion
2 Celery sticks
2 garlic cloves (I always use Dorot frozen garlic cubes)
3 Chicken Oxo Cube
4 Chicken fillets, cooked.

Method:

Put the Cabbage, Red onion, celery sticks, garlic and stock cubes in a pan. Bring to the boil, then turn down to a simmer. I personally wanted a 'soft' soup, so I simmered it for about an hour. 
Cook the chicken however you prefer. I use cook from frozen chicken fillets. I find they are easier, as I always have chicken in the freezer and it's an easy way to throw together an easy, healthy meal.
If you want it to taste its best then leave it sit, not cooking, for an hour or two. Like a stew, the veg seems to take on more of the flavour.
When you are ready to eat, put the chicken in and heat back up.
I do love a simple recipe, this can be seasoned to your personal tastes. It was full of flavour and filling!

So with my food like this, fingers crossed I will have good news next week!

  2. Ah Jo, you will get there, you will. It isn't easy and I know with me not being so mobile for the next few weeks I am going to put on loads of weight, I can almost see it coming! When I've lost weight in the past, I did it quite quickly by eliminating white food from my diet, all white bread, pasta and rice and limited the amount of potatoes I could eat - I'm Irish, I couldn't lose my spuds completely ha xxx

    I also haven't lost this past week, however, I haven't been exercising.... and that counts for a lot. Also as Nicola said, cut out all the white stuff (the carbs). Very hard but necessary for weight loss. Hang in there!!
